Crust recipes – Fillings

Beyond the basics, tasty new recipes 
Now that you have mastered the basics of the Easy apple pie, here are two excellent crust modifications and two pie fillings that we have found to be very popular.Note: these recipes are designed to incorporate the directions used in the crust, apple filling and putting-it-together pages. Orange Juice Pastry
Orange peel and juice with nutmeg create a spicy taste to the crust.Ingredients
2 1/4 cups all-purpose flour
1/4 teaspoon ground nutmeg
1 teaspoon salt
1 tablespoon sugar
one orange grated
10 tablespoons cold unsalted butter
5 tablespoons cold butter flavored shortening
8-10 tablespoons fresh orange juiceMix dry ingredients in a large bowl. Grate orange rind into flour mixture. Cut in butter and shortening with knives or pastry blender. Chill for about 10 minutes. Use juice of orange as the liquid. Add orange juice to the flour butter mixture a few tablespoons at a time. Stir in juice until mixture begins to stick together. The dough should be moist and cool, not sticky and wet. Gather dough into two round flat disks, wrap in plastic, and refrigerate while preparing filling.
A lattice top can add a look of elegance.
Sour Cream Pastry
Sour cream in a pastry produces a very tender crust. The texture of the dough is much smoother than other pastry recipes. To reduce the fat content, substitute low-fat sour cream or yogurt.Ingredients
2 1/4 cups all-purpose flour
1/2 teaspoon salt
12 tablespoons cold unsalted butter
2 tablespoons cold butter flavored shortening
8 ounces sour cream or yogurt
1-2 tablespoons cold milk (if needed)Mix dry ingredients in a large bowl. Cut in butter and shortening with knives or pastry blender. Chill for about 10 minutes. Slowly add sour cream or yogurt to the dry ingredients. With a wooden spoon, stir until mixture begins to clump together. If dough does not stick together, add a tablespoon of milk to bring the dough together. The dough should be moist and cool. Gather dough into two round flat disks, wrap in plastic, and refrigerate while preparing filling.
Cranberries are a favorite addition to an apple pie.
Dried Apricots and Pineapple Filling
The combination of dried apricots, pineapple, and brandy is incredible. The fruit takes on the flavor of brandy.Ingredients
7 apples, peeled, cored, and sliced
1/2 cup chopped dried apricots and pineapple
1/3 cup brandy
3 tablespoons apricot preserves
1/4 cup sugar
2 tablespoons all-purpose flour
1/4 teaspoon ground nutmegMix the ingredients as your dough is chilling. To complete your pie follow the directions in Putting it together section.
